What? It's Friday?!

This week went so fast for me. I am a school nurse, and we had two snow days this week, which I LOVED. One day we also went into school 2 hours late. The week just flew.

Eating has been good since Monday. I am enjoying the healthy foods, and get a lot of inspiration from fellow bloggers, especially those that post pictures of their meals. I love it!

Tonight I decided to pull out an old favorite...Boca burgers. I always forget how much I like them. I cooked one up and melted some havarti cheese on top. Added a little raw spinach, some ketchup and mustard, and it was really, really good. Had it w/ some leftover broccoli and some blueberries. I have been hungry though in the past hour or two, so I ate a banana and then an apple. Following my new rule. If I am hungry after dinner, I can only eat fruit or veggies. I have found that by following that standard, it keeps me from mindless nibbling, and I only eat if I am truly hungry.

Weigh In is tomorrow morning. Let's hope it is a good one! :)

  1. Bocca Burgers are one of our favorites here ! If you ever feel adventurous, you might also enjoy using portabella mushrooms as a burger as well. Very "meaty" in texture, and very satisfying. Good luck on tomorrow's weigh in !

  2. What a good idea about the fruit or veggies after dinner. That would save a lot of calories! Good luck with your weigh in!

  4. We've had 4 snow days here and possibly more. Depends on if they get electricity back to the schools from the ice storm we had. I hope they get to go back because as it is we're gonna be in school into June. We had 5 days out when Hurricane Ike winds hit us (Hurricane winds in Kentucky -- go figure) and gave us 5 days out of school and now 4 days this week. Both because of electricy problems. We've NEVER had this many days off. Enough about myself...

    Just wanted you to know that I'm taking you up on your challenge of 15 minutes of strength training a day. It's one of my February goals. I've already got 16 minutes in this morning. :)
